Today I wanted to share another one of my favorite indulging recipes, sugar free cinnamon bites. This one is great to share with everyone in the family, and you will probably have to double-batch it because everyone is going to love it.
You can eat these delicious cinnamon bites for breakfast, dessert, or even as a snack without having to worry about your waistline. These are made with my favorite sugar replacement which reduces the calories and the sugar intake in your diet.
This recipe is super easy to make below are the ingredients and simple instructions:
Ingredients:
Cake Batter
- 1/2 cup of plain yogurt
- 1/4 cup sour cream
- 1/4 cup of Lakanto Monk Fruit Sweetener
- 2 large eggs
- 2 1/2 cups of Almond Flour
- 1/4 tsp Himalayan sea salt
- 1/2 tsp baking soda
Topping
- 2 Tbsp ground cinnamon
- 4 Tbsp Lakanto Monk Fruit Sweetener
- 2 Tbsp unsalted butter
Instructions for Cinnamon Bites
-
- Preheat the oven to 310 degrees F
- In a large size bowl combine all the wet ingredients for the batter into a bowl and blend well with a fork. Add the dry ingredients for the batter and blend well. This will yield a medium consistency batter.
- Melt the butter for the topping just until melted. It takes about 20 seconds in the microwave.
- In a separate medium size bowl combine all the topping ingredients using a fork.
- Place cupcake liners in a muffin pan and fill the liners 2/3 with batter.
- Add a small crumble of topping to the muffins and mix into the muffins with a toothpick
- Bake for 20-25 minutes or until a toothpick placed in the center of a muffin comes out clean.
The texture is moist but as with all recipes with almond four is a bit thick. The picture below show the texture and how I usually mold them in the muffin tins. These are truly delicious!
The recipe yields 12 cinnamon bites. These cinnamon bites last up to seven days in the refrigerator and freeze very well.
These cinnamon bites are great in a standard diet because of the zero sugar added and are also keto-friendly for those trying to get some of their sweet tooth while on a diet.
